To create a new Org Unit or edit an existing Org Unit, go to Settings -> Legal Entities and select the Legal Entity which the Org Unit is related too:

Select the Org Units tab:

Here you'll find any existing Org Units related to the Legal Entity:

To create a new Org Unit, select the "Add New" button. In the window simply enter the name of the new Org Unit:

If the new Org Unit needs to be a "Sub Org Unit" then select the checkbox, where you'll need to select which Org Unit will be the parent OU:

Once you select Save your new Org Unit will be created:

To edit an existing Org Unit select the Edit Org Unit button:

Depending on your setup you might be required to give your colleagues access to the new Org Unit(s). Guide
Depending on your setup you might be required to create new or edit Approval Channels if you use Org Units as a criteria for directing Approvals. Guide
You currently cannot have two Org Units with the same name in the one instance of Beanworks.
Once a new Org Unit is created it may not be seen by other users until they log out and back in again or refresh their session in Beanworks (F5 on your keyboard).
When editing which parent a Sub Org Unit is related too, it can change which users have access to it.
